My Story

 Pauline Catherine Daihl Wenger was our loving wife, mother, grandmother and great-grandmother.  She was 77 years old when she was given a new life in heaven.  She and Roy were married for 60 years.  They raised five beautiful children: Sharon, Wilma, Lisa, Kim, and Keith.  She was grandmother to 7:   Marnie, Renee, Mike, Shawn, Julie, Beth, and Paul.  She was a young great-grandmother to 11:   Ashlyn, Dustin, Mason, McKenna, Emilyn, Blake, Jaedon, Dillon, Sydney, Josiah, and Seth.  She loved to hold the babies and spend time making her family feel special.

She was born November 17, 1930, to the late Paul and Mary Daihl in Roxbury, PA.

We enjoyed many family gatherings at the Wenger home.  She was a great cook, and it wasn't a holiday without her macaroni salad, which can only be made with her homemade pickles.  She enjoyed collecting antiques, going to auctions, and visiting yard sales.  She liked Conway Twitty, the Gaither singers, Trace Adkins, and Johny Cash.  She was very generous with gifts and her time.  She loved her gardens and fixing up her house.  She made the best strawberry pie (with cream cheese), fruit salad, and grape juice. 

She like watching NASCAR, and her favorite driver was #99, Carl Edwards.

Some of Pauline's recipes:

Macaroni Salad

Cook, drain, rinse 1 lb. box small shell macaroni.
Dice:
    1/2 lb. longhorn cheese            1 can Spam
    1 jar green olives                       5 hard-boiled eggs
    1 pt. sweet pickles                     3 ribs celery
    1 small onion

Dressing:
    1 cup sugar                                 1 Tbsp. flour
    1 egg                                             1/4 cup water
    1/4 cup vinegar                           juice from pickles
Mix dressing ingredients and bring to boil.  Remove from heat and add 2 Tbsp. mayonnaise and 2 Tbsp. margarine.  Cool and pour over diced ingredients.


Strawberry Pie

Crust:
    1/2 cup butter                            1/2 cup oats
    3/4 cup flour                              2 Tbsp. sugar, optional
Melt butter. Stir in remaining ingredients until well mixed.  Pat mixture onto bottom and sides of 9" pie pan. Bake at 400 degress 10-12 minutes or until golden brown.  Remove from oven and cool completely.

Strawberry filling:
    1 cup sugar                              3 oz. pkg. strawberry jello
    1-1/3 cups water                     1 qt. fresh strawberries, washed and capped
    3 Tbsp. cornstarch
Cook water, sugar, and cornstarch until clear.  Remove from heat.  Add jello and stir until jello is dissolved.  Allow mixture to cool but not gel.  Pick out a few small berries for garnish and set aside.  Halve or quarter remaining berries and place in large bowl.  When jello mixture is cool, pour it over berries, stirring to make sure each berry is glazed.  Pour berries and glaze mixture into cooled pie crust.  Refrigerate and garnish with small berries.
Optional:  Add 2 Tbsp. 10x sugar to 8 oz. cream cheese.  Spread on baked pie crust before adding strawberry filling.
